If you go vegetarian for a week and find that you can't eat well, your problem is not a lack of meat, but that you can't cook and have no access to Asian restaurants or decent pizza or Mediterranean food or vegetables. Otherwise, you'd be fine. Recently, I've been trying to limit the meat in my diet, and have decided to cut it out of breakfast and lunch. I'm a suppervore, or a lunchatarian. It's no great constraint, but it's a good first step, and absurdly easy. Frankly, my lunches are better than they were before, if only because they're not so heavy, and I've grown a bit more creative and mindful in my choices. Admittedly, I live in DC, not rural Iowa, so I've more options than most. But this idea that vegetarians can't find delicious food is silly. Insofar as it has any truth at all, the problem is the lack of thoughtful vegetarian options in restaurants. But that's a function of there not being many vegetarians in general, and thus chefs aren't pressured to provide more choices.
