I tried the Smitten Kitchen huevos rancheros recipe today and it was pretty good. It's not strictly huevos rancheros -- rancheros sauce is replaced with salsa fresca, and the eggs are cooked on both sides -- but it's fresh and filling and quick. Extremely good hangover food, too, not that I'm admitting to ever having hangovers. If I were making it again, I'd probably use two eggs per tortilla, or at least use extra large eggs, and cook them for a much shorter period of time. As it was, the dominant flavors were the toppings -- which were very good -- but the dish was a bit lacking in eggy goodness.
