Three recipes, all turned out well, all are very easy. In context of my argument with Chait, I guess I should say, in case it wasn't implied, that you should try to buy sausage that was raised humanely, and with some care for the environment. I keep getting accused of moralism for this position and I stand guilty: It is more moral! And being moral is good!Alright. First up: Sourdough Bread, Fennel and Sweet Sausage Stuffing. Here's the recipe. Use more sausage then they call for -- I'd say two pounds, or even a bit more -- and cook it with two teaspoons of red pepper flakes. If you can't find fennel on short notice, celery will work beautifully. Good sourdough is important here.Cranberry sauce with pear and ginger. This is a modified recipe, but the basic version is in Cook's Illustrated. Combine a cup-and-a-half of water, a cup and some change of sugar, two tablespoons of fresh-grated ginger, and a dash of salt, sugar, and cinnamon in a saucepan. Bring to boil. Add 24-ounces -- two packages -- of cranberries, and three pears diced in half-inch chunks. Simmer till it becomes saucy. Makes enough for 12 or 15. Brussels Sprouts with Shallots and Wild Mushrooms: Full recipe here. I have really nothing to add. Good if you're cooking for vegetarians, and if you're not. Brussels sprouts are underrated.
